My boyfriend fell head over heels in love with the warm fig, date and cinnamon cake with rum raisin ice cream. I have done some searches but can't seem to find a recipe. Can anyone help? Thanks! I LOVE those fig cakes. On our last cruise, I ordered two or three every night. I would save them for breakfast the next morning. (Not the ice cream, though.) Avoided them for many years cuz they sounded 'weird'....but then after having tasted everything else I tried it one night and was hooked! Now I make sure everyone I am with orders one! :D:D (and then they also become 'converts'!). Still have not managed to have the bitter and blanc tho - I know people rave about it as well (was hoping to have it on my last cruise but turns out we were in the suipper club the evening it was served!). The bracketed amounts are my attempt at translating the amounts from grams to ounces Warm Fig, Cinnamon and Date Cake as served on Carnival Cruise Lines 200 g******Soft butter (7 ounces) 200 g******Sugar (7 ounces) 4 ea********Egg Yolk 100 ml*****Sweet white wine (3.40 ounces) 250 g******Flour (8.75 ounces) 10 g********Baking powder**(2.1 teaspoons) 1 tsp*******Cocoa Powder ½ tsp*******Cinnamon powder Pinch of pumpkin pie spice 4 ea********Egg white 350 grm**dry figs chopped**(1.53 cups) 250 grm*dates chopped***(1.09 cup) * Method: Mix all the dry ingredients together and keep it aside Cream butter and sugar in the mixing bowl using the paddle Mix until fluffy then add the egg yolks one by one Add the dry ingredients with the above mix, on lowest speed Add the white wine, mix well Beat the egg white in the mixing bowl with the whisk Mix the beaten egg white with the main mix by hand Fold in some of chopped dates and figs into the mixture Pour the mix in a greased mold.**Unmold to serve. I plan to make it soon using little loaf pans, or those great big muffin tins would be really great. It was a very moist cake, if you remember, sort of a warm, cloud of flavors, densely flavored, but light. will try their recommendation for 15 minutes, but will cook longer if necessary.
