Either Pacific time or Alaska time, depending on the ship's location. On a Vancouver to Seward itinerary they will probably switch to Alaska time the night before your first Alaska port. They are very good about letting passengers know when the time zone changes occur.

Yes if you are going out of Vancouver the first day will probably be a sea day, they will switch that night to Alaskan time which is EST -4 What is cool is that our analog clock on the wall in the room automatically switches.
