What is there to do in Coz at 6am????

We're arriving in Cozumel on Crown Princess at 7am EST (January) and it's my understanding that this will be 6am local time, right? What on earth will be open? I assume shops won't open until at least 8am, and the snorkeling tour we want to take doesn't start until 9am local time. I'm not against sleeping in and having a nice breakfast in the main dining room, but I sort of like to cram as much fun into one day as I can. Any suggestions?
