World Cruise Segment

We are looking at taking the LAX to SYD segment of the upcoming world cruise in 2011. We have traveled on different lines from Silversea, QM2 (Queens Grill), and Oceania. The trip is 31 days and will have many days in a row at sea. We have done similar lengthy itineraries on larger ships, so I have a few questions - anyone have experience on Seabourn on transoceanic crossings? What are the "at sea" daytime activities? How does Seabourn experience compare? I would be traveling with my mom, so I like to get as much information as possible before booking. Thank you in advance for any help!
