Anyone have the recipe for coconut cheese (fudge)??

I am going on my first cruise in May, unfortunately it doesn't go to Dominica. I lived there for a summer in high school doing volunteer work and loved it! We lived in Laudat, the village right before you take the trail to Titou Gorge and Boiling Lake. We lived in a cute hosue right next to Mano's which is a little hotel & bar.

 

One of the yummiest things I had there was coconut cheese, which is really coconut fudge. We made it with some of the locals a few times, but I lost the recipe. I've been searching online since I got internet back in 1994!! and I've never been able to find it.

 

Also, if you go there and see ladies with big baskets full of slices of plain cake - try it - it was delicious! I am a picky eater and I swear I searched those ladies out every day for my 2 slices for $2!!
