Coz, Jamaica, Cayman, Progresso, with 2 & 4 yo, what to do?

Hey everyone! Long time no *see*. My masters program is ending in late August (YAY!!!) and we are going to be cruising twice to celebrate this fall.

 

We are thinking of doing an all inclusive beach. The adults would like food and booze, the kids would like activities. Does anyone have any reccomendations in any of the above ports?

 

We are contemplating swimming with the stingrays in cayman. We will have life vests for the kids. Has anyone ever done one with toddlers? If so, how did it go?

 

Also, what is fun to do in Jamaica with toddlers?

I've been researching taking my two little ones on a Western Caribb. route -- including the sting rays in GC. No BTDT for you, but I've found others who have. Mine will be 5 1/2 and 2 1/2 when we go (Feb 2012) and I am hoping both are comfortable going in. The older one will be now.
