Formal dining nights on a 9 day cruise

Hello! First day is going to be incredibly busy for me when I board the ship, since I am getting married. I thought I'd plan ahead for our June 4 trip on the Caribbean Princess and figure out when to do our specialty dining. If the cruise is 9 days (we return to NY June 13 so to me that's 10 days, but apparently not to Princess ;)) when do you guys think formal nights will be? There's 2.

The first formal night is usually the 2nd night of the cruise (first full day at sea) and the second one usually falls on the second to last night of the cruise.
