We took a catamaran out of St Thomas to St John and the barrier islands also. Incredible day snorkling! Worth it for the scenary alone...but as a bonus, we also got to see a rather large octopus and a 4 ft nurse shark. Throw in open bar and all you can eat and it is a day that's tough to beat.

 

In Barbados...you HAVE to do the Turtles!! We did the Carnival 5 star tour, but I agree that SMALLER groups are better. Absolutely a must do.

 

Great snorkling in St Lucia...saw barracuda, lobsters, and my first eel. Drawback there was water clarity and lots of Jellyfish (small ones, but even small ones sting!).

 

That would be my top 3 in order.

As for a nice hotel, we stayed at the Marriott Stellaris in the Condado area. It's about a 10 minute drive from Old San Juan and it's right on the beach. We got a room for $100 per night through priceline and would not hesitate to stay there again. It's a safe area with lots of restaurants within walking distance of the hotel.
It has been many years since staying at Stellaris, but I agree a nice precruise hotel, the pool is really nice,relaxing and also offers a beach/waterfront if you desire and casino,live music.
