Tips on beverages in MDR

Does anyone happen to know who gets the money from gratuities on beverages served in the main dining room? For instance, does this all go to the assistant server or is it put into a pool for all the servers?

 

It occurred to me, for instance, that if a couple drank a $30 bottle of wine at dinner every night on a seven night cruise and that 15% (or more) all went to the assistant server, the assistant server would be getting compensated better than the head server in terms of tips, if one follows the suggested guidelines.
