Gluten free

Wondering if anyone has had luck with special dietary considerations for lunch in St. Martin or St. marteen, particularly with gluten free meals. I will bring snacks and protein bars for the day but it would be a great bonus if I could eat a proper lunch during our day there. At minimum I can order a fruit plate and plain chicken if I am confident the chef or cook understands how to avoid cross contam. After I speak with him/her. Any luck with this from others here?

 

Planning mostly a beach day so haven't chosen areas yet-will see if any restaurants are recommended and go from there.
