How LATE can you stay on the ship on debarkation day?

I don't know for sure but I suspect they try to get everyone off before 11 AM since sometimes they are beginning to load new passengers about then. We have been among the last getting off on several cruises and I don't think it was ever later than 10:30 AM.

 

Given you probably will need to be at the airport two hours ahead of your flight (American Customs) and given time to get to the airport, I suspect you will want to be off the ship by 10 AM or so anyway.

Since most everything is closed down for cleaning such as pools, spa, bars. coffee shop, etc. not much to do other than stroll around. A lot of the employees are allowed "off hours" on such days unless cleaning/preparing for the next passengers.
