Carnival's only limitation is that it needs to fit through the scanner. The dimensions are on the website. Even on our first cruise we did exactly what you are doing and were fine. I have no need to change 3 times a day and packing light is a very high priority for me. If I need something else- a cruise ship is not Siberia. In Siberia, you can't buy it- I know because I was there. There is nothing you need that you could not replace onboard with the exception of your medications. Everything else you wither don't need, or can get. On one cruise, I carried on a school backpack, a medium sized rolling suitcase, and a suiter (suitcase for carrying a suit). I didn't check anything. Cruiselines don't have the same restrictions as airlines. If it fits through the scanner, you can carry it on.
