Does freestyle refer only to dining schedule and seating?

Do all restaurants stay open several hours to accomodate everyone's time, eg

dinner served from ~4:30 to midnight?

In fact the main restaurants stay open from 5:30 to midnight if needed, The latest seating is 10 pm. Trust me if you show up at 10(which I have) you will be out by 11. These folks need a little sleep.

FYI a good list of FAQs at Ncl.com

Freestyle also encompasses the "resort casual" dress code being deemed appropriate attire every night, including the optional formal night(s). Lastly, Freestyle disembarkation allows you to use your cabin until your group is called for disembarking. On most traditional ships, you have to vacate your cabin and wait in a public lounge.

Freestyle means you can set your own schedule for meals except at the speciality resturants that you need to make a reservation for. On the Dawn there are three main resturants that require no reservation(plus the buffet and Blue Lagoon). When you go to the one you have chosen is up to you. Where you sit is up to the Maitre D. You can choose to sit by yourself or share a table. The resturants normally are open to enter between 5:30- 10. any time in between. there is also room service and food in the bars at various times.- Read the freestyle daily they will tell you what and where. Also freestyle means relaxed dress and no required formal nights. Finally getting off is freestyle as well. Enjoy your cruise---the more you know hopefully the more you will enjoy but remember the most important thing is to enjoy the trip and worry less about what you are missing....
