How do I choose an insurance policy?

I've gone to insuremytrip.com, but I'm so confused on which plan to choose. I want to be reimbursed if I miss the ship, $1200 for the two of us, (four nighter out of Miami) and I want to be covered if we get injured in any way while on the cruise. We're not renting a car, we're carrying on our own luggage on the plane, we're in good health, what would I need for limits? Thanks for any info. :)

How do you guys decide how much insurance you need?

We use Travel Guard. Get coverage for the total cost of the trip including air fare. I believe the cost goes by $500 increments.
