I've just read about a non profit organization that organizes volunteer opportunities in Caribbean ports for cruise ship passengers. If anyone has participated in anything like this please share your experiences.

The Cruise With Purpose® concept was launched in Juneau, Alaska, in the summer of 2009 with the Whales & Glaciers Citizen Science Adventure operated by Holland America Line’s long-time tour operator partner, Gastineau Guiding.
