I'm asking for my parents that are traveling from the UK to USA for a Caribbean cruise. Obviously I know what passport and visa means. However, what kinds of inoculation certificate would they need? And what does RCCL mean by family documents? Any ideas?

You wont need any inoculations for the Caribbean, family documents means documents refering to minors, regarding permission to travel from non travelling parents/guardians etc, or showing parenthood of a child with a different surname
