Traveling with young children

My husband and I will be traveling on the Carnival Glory on January 26, 2014 with our two young children, ages 2 & 3. My question is when we arrive at the ports (Nassau, St. Thomas, San Juan and Grand Turk) if we are interested in traveling to a local beach or participating in an activity that's not within walking distance, what is the safest mode of transportation? Do we need to bring carseats?
