I made such a fuss about what a great chef he was, that I got the recipe & do it at home: Avocado and Citrus Starter recipe ingredients finely grated rind and juice of 1 lime 1 tsp (5 ml) clear honey 2.5 ml (1/2 tsp) Dijon mustard salt and pepper, to taste 3 tbsp (60 ml) olive oil 1 large grapefruit, peeled and segmented 2 large tangerines, peeled and segmented 1 large avocado, peeled, stoned (seeded) and thinly sliced 2 oz (50 g) strawberries, hulled and thinly sliced lime twists, to garnish method 1. To make the dressing, put the lime rind and juice, honey, mustard and seasoning in a bowl and whisk together. 2. Gradually whisk in the olive oil. 3. Arrange the grapefruit, tangerines, avocado and strawberries on 4 plates. 4. Spoon over the dressing, garnish with lime twists and serve immediately. Now, if I can just figure out how to prepare this for 150 people. :eek: I was thinking of serving this as the starter for my nieces NYE wedding. Living in Florida, I have easy access to plenty fresh citrus that time of year. I'll probably have to substitute the strawberries for another fruit though.
