As a general rule, June-August, Thanksgiving, Christmas,New Years, college Spring Break and Easter holidays usually have ships full of children.

Since the ship is based in Sydney, their summer is December, January and February. Then I would look at the Australian holidays to determine when schools would be most likely out. Maybe a Google search of Australian school holidays would help you determine when the ship would have less kids.
