For the guys, is a button-down shirt plus nice pants (no tie or jacket) acceptable on those nights? Thanks in advance for your answer! (This is for a Caribbean cruise). Most common is some type of casual button shirt, long or short sleeves with dress or nice casual pants. Some will be wearing polo shirts, some in very casual pants such as jeans (nor rips or tears). A few will be wearing dress shirts and a few even sport jacket and tie even on casual nights. You'll be comfortable there in anything short of shorts or shirts that have no collar or no sleeves at all. In the Caribbean I like wearing Tommy Bahama type shirts and nice pants.
