excursions for the less mobile

Hi fellow cruisers, my wife and I are anxiously counting down to our next cruise in the Caribbean in April. In looking at the cruise excursions for Belize I see that most of them involve walking or other strenuous activity. My wife has a lack of mobility but still wants to enjoy an excursion in Belize. Anybody have any experience with this or any suggestions? She can do some stairs and walk a short distance but can't do the more extreme activities. We really wanted to do the cave tubing but have seen many posts that suggest this won't be possible. Looking forward to hearing from you all.
