Last-minute specialty dining on Solstice/Alaska?

We are booked on Solstice/Alaska this August.

 

We are planning to take our four children along (with connecting staterooms).

 

We hope to sample the specialty restaurants (without kids), but we can't anticipate which nights or times will work best given all the other available activities.

 

What are our chances for securing same-day (or even last-minute) reservations in the specialty restaurants?

 

I've read elsewhere that the specialty restaurant dining reservations disappear quite quickly. However, on Millennium last August we found very good availability in the specialty restaurants with little/no advance notice. I'm not sure what to expect on Solstice.

I've been to the speciality restaurants on every cruise and I normally only book that day. So far I have never been disappointed -although on occasion the exact time I requested was not available so maybe had to go 30 minutes either side!
