We are going on the Tahiti cruise in July and want to book some excursions that might get sold out, but was wondering if we could cancel them at a later time if we decide we are overbooked and just want to hang out on the boat/beach. Probably best to contact Windstar and ask them this question. We always book most of our shore excursions before we leave home but on many occasions we have canceled before we went on them. They usually require 24 hour notice and then credit your shipboard account. Also, if they do not have enough people signed up they will cancel the excursion and you are SOL.
