When to book the Steakhouse?

We are leaving next week on an 8-day on the Liberty, but I can't locate menus from 8-day trips. I have no idea which days would be good to skip the MDR and go to the steakhouse, and from what others are expressing, the steakhouse reservations can be hard to come by. Is there a way to see all 8 day's worth of menus once I board, so I can quickly attempt a reservation?

We book it the day we use it, usually on a menu with poor choices night.

We are also going on the 8 day, I have heard that the formal nights are on the fist full sea day and the last sea day but that is our last night on the ship...any thoughts?
