Excursions?

We are new to NCL and are traveling to Alaska on the Pearl August 3. I realize that this is peak time for Alaskan cruises, so I wanted to go ahead and book our "must" excursions before they are sold out. What happens if we change our mind after we have booked and paid for it? Want to change the time we are going on a specific excursion? What if they post another excursion that we would rather do; can we switch to that excursion? Just curious...
