Ladies can simply wear pant suits, or slacks and a top or dresses and men can wear nice slacks and a casual shirt. On informal night they will ask men have a jacket but no tie is necessary. Women can get away with the same outfit they wear on most other nights. Just think about a nice restaurant in your home town that does not require jackets and you have it. My husband is kicking and screaming about wearing a coat and tie! Being a longer cruise there are more "formal nights" but we are really not into the "tux and formal gown" thing.
