Beach and Sightseeing questions

2nd visit to St. Thomas. Last time we took a snorkelling excursion to St. John's. This time we want to see more of St. Thomas. We don't see any excursions that really seem to be what we want. We be in port on a Sunday in January. We have narrowed our choices to:

 

1. taxi to Sapphire Beach or Magens Bay. We like snorkelling and I like shade but wonder if we will regret not seeing Magens Bay. Are taxis reliable for the return from Sapphire?

 

2. Town walk and Blackbeard's Castle (but just checked the website and is looks like it's not open on Sundays--really?)

 

3. Bike/beach on Water Island. Hubbie is very nervous about ferry schedule--me not so much, but I don't want to be the one who causes us to miss the ship because of flaky ferry service.

 

Any advice from travellers familiar with St. Thomas appreciated. Thx.
