I've found the easiest way is to just put in 1 passenger when you are searching Carnival.com. In the past I actually found more cruises and better prices than were listed on the "Single Supplement" list.

 

Good Luck - I hope you are able to find something. I've been looking for spring time, but haven't really seen any deals yet.

That is what I am looking for too and out of NYC.
