Can I use gift cards to put as onboard credit to cover daily gratuities, photos, excursions or anything else I may buy? I'd like to buy a gift card whenever I have extra funds and stock up on them and then add to my account, can this be done? TIA!

Yes. Gift cards are like cash money what comes to onboard account.

 

But just for the sake of simplicity, I'd just stash the money somewhere (a separate bank account, under the mattress, you name it) than adding one extra complicating layer when saving for my own trip. For giving spending money to others, well that's different. :)
