Name of Chef please on page 11 (culinary arts centre) in the 2015-2016 cruise planner

He was the executive chef on two cruises my DH and I took, I think one was to Alaska and the food was exceptional. He came into the MDR every night and asked many of the guests if they enjoyed their dinner. Does anyone know his name (maybe Juan Carlos?) and if he is still with HAL, what ship is he on please?
