Thanks to anyone that can help. Carnival does not have formal nights. They designate a night for people to dress up, but it's to sell pictures and not enforced. Based on what I have found based on the 7 day Western Carribean it will be on the Sea days. For western that means the second night and the last night. I think Eastern itinerary is the same. I think Eastern itinerary is the same. utwhee had the correct answer in post 2. Sea days on the eastern are on the 3rd night and the last night.
