You can always do what we do, we book every night on-line and pay by credit card. Then once aboard purchase the UDP and get a full refund of your on-line purchases back to your card or seapass which ever you choose.

The benefit is you can guarantee your dining time and venue. If the UDP is not available you can still cancel for a full refund so you don't lose.
