We have never realized used the specialty dining before because, well, Chops didn't really seem vegetarian friendly. (Maybe they make a mean soybean/tofu steak....) If the menus do not give you enough info to make a decision, then I suggest you visit the venue early in the cruise and ask what they can do with regard to vegetarian options.
