Prebooking excursions/dining

Hi - I'm on a 10nt cruise on Independence this October, and was wondering if it was better value to book our excursions/specialty dining before we go?

 

We cruised Brilliance 2 years ago, and got a good deal for 5 specialties, including Chefs Table, on embarkation day when we were buying our drinks package, but I can't for the life of me remember what we paid, and this time our drinks package is included in the fare.

 

Any thoughts?
