I have heard that it is more expensive to book shore excursion through Carnival. Can anyone tell me other websites they have booked shore excursions through and have had good luck with?

I booked a trip to Stingray City through this company. They take a deposit and state that you get a full refund if your ship can't make it to port. They arrange tours on several of the islands. They also have a "live chat" function so you can ask questions before you book anything.

There are a lot of companies at the various ports that many of us have had great success with. The port of call board has great information on some of the good ones. Just be careful that there is a full refund available if for some reason the ship misses that particular port or arrives late.
