one easy option is to use travelocity.com and select the sailing you're interested in and then select category and the open cabins will appear.

 

NOTE: I am not aware of ANY website that shows ALL available cabins, even by category. I have always found this odd, but even the best of websites that I know of will only show up to maybe 10 available cabins by category.
