Self Guided Walking Tour or Private Tour?

We have a group of 16 people going on a cruise in June. Nassau is our first stop. We are looking at a rum and food tour but we don't want to join any other groups. We would like it to be private. If we did a self-guided walking tour to a few stops like the Staircase, Rum Distillery, Rum Cakes, Chocolate Factory and a place for Conch Fritters would we still be able to get samples at the distillery, cakes and chocolate factory or do you have to book with a tour to get the samples?

If the answer is no to the above, are there private tour companies that we could hire to do the same thing and get samples? If so, do you have a recommendation of who?

And finally are there other stops you would recommend?
