tip for open seating?

I've read that breakfast and dinner in the main dining room are "open seating", which I assume means you don't necessarily eat at your usual dinner table with your usual waiters. Am I right about that, and if so, is it customary to separately tip the waiters at this open seating lunch or dinner?

Same thing happened with us Terry. We met a wonderful waiter at open seating lunch. I didn't tip him at the time but later I sent him something to say thanks. On our following cruise we requested him for our dinner waiter and we had a wonderful time. We also met a great waiter at breakfast on a later cruise and we gave him an extra tip at the end of the cruise.

We enjoy open seating breakfast and lunch as it gives us the opportunity to meet and chat with new people and also get to know the staff.:)
