Dining question - if we are assigned to late, can we do "Your Time?"

We do ATD and if we find a table and wait staff we like we just ask for them each night. Last cruise we were able to have the same area with same staff.

Has anyone managed to change their dining option after booking and before boarding ship? Early dining was not available when I booked my parents' anniversary cruise. We are a party of 9 including 2 younger children so late dining is not an option, and I envision anytime dining as being stressful while waiting for a table. On previous family cruises, having a set time to meet at our dinner table has been extremely important as everyone does their own thing during the day.
