Traveling with Mom, looking for level 1 excursions in Roatan, Bay Islands stop.

Our Eastern itinerary just got moved to a western, Norwegian Escape so now I'm trying to find Level 1 excursions that my mom can participate in. She can't walk a lot so, any suggestions would be much appreciated. Thanks! ;)

Would you consider Boddenn adventures? We've used them twice and it's gone very well. They can provide you with private transport anywhere you'd like to go in Roatan. If you like animals, the owners house has monkeys and birds you can play with. There's an iguana farm on the island and they can take you to nice beaches.
