Trolley Roger?

I was in Grand Cayman this past March with my sister on a Norwegian Cruise Line excursion - Trolley Roger. My husband and I will be there with the kids next week.....however the Trolley Roger isn't available through Carnival.

 

I can't find anything online about booking it. Is that a tour offered through NCL only? Or how can I find this? Anyone know?
