Can someone tell me: after I drop off my bags with a porter at the pier, would I be able to then take my rental car back without leaving someone with the bags? Since it will only be my wife and I, and my hearing is impaired, I would like to have her come with me to drop off the car before we check in.

Yes, no problems! You simply drive up, provide your paperwork to the luggage person who will help you unload . He/she will then place your luggage in a trolley for loading and you drive off to park or return car to rental place!
