Special dining

our first time cruising and on our last night we would like to do some fine dinning at the seafood restaurant. Is it better to book before we go or wait till on board. Sailing on symphony of the seas

I'd book pre-cruise since you have a specific night on which you wish to dine.

We go to at least 2 specialty restaurants each cruise and we enjoy it, but I wouldn’t call them “fine” dining. We have never had trouble booking the time we wanted onboard. If they have a preboard special, I would recommend you book it. You can always change the day/time onboard.
