Just my opinion, I would book the Hyatt at the airport for Friday night. Get you luggage and check in. Then in the morning, after breakfast, rent a car from Budget and make your way down to Port Canaveral Saturday morning. It is only a 45 minute drive and this will give you freedom to come and go as you want. Budget's return is 1/4 mile south of the port with a free shuttle service. I have stayed at the Hampton Inn twice. It is about 3 miles down A1A from the port and the Radisson at the Port. Hampton Inn offers a complimentary breakfast, nice pool area and a walkway to Cocoa Beach. There are many restaurants within walking distance but with a car you can have an early dinner at Grills at the port and watch the other ships leave Saturday night. Grills also has a 10% coupon on their website which we used last year. If you don't rent a car, Arts shuttle service can take you to the ship for about $5/pp. We have also stayed at the Radisson but it is very crowded on cruise day, even with scheduled shuttle times. I grew up in the area and it is very easy to get around.

Thanks a million for the tips. My trip is in celebration of my Mom's 70th b-day (in about 10 minutes ... New Years Day!), and I want it to be special, but the pre-cruise days are just for some R&R after we manage to leave our homes (hers in Northern Idaho, mine in Vail Colorado).
