Will my hotspot work on the Grand Princess to Alaska, or do I need to purchase the internet package?

In Alaska, you'll be able to use your phone plan to call them while in port. Just be sure you are picking up a US tower rather than one in Canada (look for the little roaming icon on the phone).

I was on the 3/23 - 4/7 cruise and I thought the speed was pretty good. I was able to stream YouTube videos with very little lag.
