Which nights are the "formal" nights?

We are traveling Sunday on the Freedom (Curacao, Aruba, St. Kitts, St. Thomas) and wonder how to figure out ahead of time exactly which nights will be formal nights.  We like to dress up a little and attend those, and would like to book a dinner at a specialty restaurant for a different night but would like to do that before the masses board and take the "good" times.  Should I assume it will be the sea days (# 2 and 5)?  Is it posted anywhere to know for sure?  TIA, Julie
