Late departure - What's for dinner?

I'm booked on Adventure of the Seas out of San Juan in March. The ship departs late, so I'm curious what the dining options/availability is when that is the case, never having done it before.

Dinner will be as usual :)

 

The times may be a little off from the rest of the week, but you be at your assigned table and seating. Windjammer and the Cafe will be open also.
