Cairns Cruisers Posted February 28, 2019 #1 Share Posted February 28, 2019 Hi, I'm chasing advice on a hands on cooking school to learn Cajun/Creole in NOLA. I've found ones where you watch the chef do everything and have a meal etc at the end. I cannot seem to find one where you prepare the meal yourself at the same time the chef is. We will be in NOLA for 4 days and want to dedicate a half day/full day doing this. Thanks, appreciate any info.
beaucajun Posted February 28, 2019 #2 Share Posted February 28, 2019 I found this one. https://neworleansschoolofcooking.com/classes Just as a warning, you won't find much authentic Cajun cooking in New Orleans. More Creole than Cajun. Authentic Cajun cooking is found in Cajun Country of South Louisiana.

jgmpuma Posted March 1, 2019 #4 Share Posted March 1, 2019 If you would like to learn about Creole cooking, a great way to start is with La Bouche Creole. It is a cookbook by Leon Soniat, first published back in 1981 and still in print. It captures the European/African roots of the cuisine of New Orleans with lots of local classics. The recipes are easy to follow, but success depends a lot of the fresh seafood readily available in this area.
