Don't worry too much about having late seating. You're on vacation, so the kids' schedules will be goofed up anyway. Kids can always take a late-afternoon nap, or they might want to eat with the kids' clubs sometimes. Just make sure they get to eat in Animators - I think it's the best dining room for kids.
