Daysailing for someone older?

I have been thinking of arranging a daysailing trip for my mother and I in St. Thomas. I've been doing a lot of research on this board and visiting the daysailing websites but unfortunately the majority of the pictures on the daysailing websites are of young people. I'm 30 but my mom is 62. She gets around just fine and does aerobics/walking but I'm worried about her being cramped into small places on this boat. Her joints don't bend like a twenty year old. If she is going to feel uncomfortable or get stiff from sitting on a hard seat then I'd rather we skip it and do something else. There have been a lot of positive reviews on this board, I'm just wondering if there are any individuals over the age of 60 who have gone daysailing that can give me some feedback.
